The two sauces that matterNước mắm (fish sauce) is fish — usually fine, but flag cross-contamination. Mắm tôm (fermented shrimp paste) is shellfish and hides in many dips and braises — the card above names it. Cambodia: prahok is fish paste, but kapi (shrimp paste) is the same risk — print a Khmer version of the card before departure (checklist below).
